Pumpkin Spice Granola Recipe (Vegan, Gluten-Free, Refined Sugar-Free)

It’s the season for all things pumpkin spice, so why not share my basic fave granola recipe? This is super easy so you won’t be tempted to buy granola in the store ever again. Ever. Seriously, just a few ingredients ( only 7 ingredients to be specific) and you are on your way to pumpkin spice granola heaven.

And since we’re making pumpkin spice granola, why not use it for topping your favorite apple crumble?

Endless options for granola.

Granola and your favorite coconut yogurt and berries. Granola on your fave ice cream. Granola on your breakfast bowl. Granola on your chia pudding parfait.

Yes, I’m a granola-loving chick.

This recipe is so simple. It takes just 30 minutes and 7 ingredients, The key ingredients are the stars of this pumpkin spice show.

Pumpkin spice.
Maple syrup.
Pepitas aka pumpkin seeds.

Since we are talking about fall, we can add in my favorite fruit, apples! I’m just a little bit apple obsessed. I carry a separate eco bag to the farmers’ market to put all of my apple bounty in, and I’m contemplating a visit to an apple orchard soon.

When I made an apple crumble with this granola, I wondered why I hadn’t thought of topping it with ice cream before. It was hot and bubbling from the oven as I scooped some vanilla “nice cream” into a bowl of the warm apple crumble and had a spoonful right away.

This makes the perfect fall dessert that is also refined sugar-free. I use Lakanto classic monkfruit “sugar” as well as their “maple syrup” made with monkfruit.

If you do the a la mode thing, check your vegan ice cream labels to make sure about that (or make your own vegan vanilla ice cream). If you are a purist, this apple crumble is just as good without the ice cream too. Just eat it with a little almond milk and you’re groovy.

You can use coconut sugar and maple syrup if you want a little more sweetness and aren’t totally avoiding all sugars, but for you sugar-free people, use monkfruit “sugar” and you’ll feel like a little kid again.


PUMPKIN SPICE GRANOLA

Simple to make healthy granola with all the spices for fall. Just 7 ingredients, perfect for topping apple crumble. Vegan, gluten-free, refined sugar-free.

Ingredients

Instructions

  1. Preheat oven to 300 degrees F

  2. Mix the oats, seeds, spices, sugar, and sea salt in a large bowl.

  3. In a deep saucepan over low heat, add the coconut oil, maple syrup, and a little more pumpkin spice if you’d like, and whisk.

  4. Pour into the bowl of dry ingredients and mix with a wooden spoon.

  5. Spread granola mixture evenly on a baking sheet and bake for about 30 minutes.

  6. Once the granola is toasty, stir around to mix up the golden bits to allow the rest of the granola to brown.

  7. Once toasted to your liking, remove from oven and let cool completely.

  8. This batch keeps in an airtight container (I use a large glass jar for my granola) for a couple weeks. Enjoy with oatmilk, almond milk, plant-based yogurt, or on top of warm apple crumble!
