Espresso Smoothie {RECIPE}

I’ve always found the aroma of freshly brewed coffee to be so intoxicating. Perhaps it’s just the idea of coffee that appeals to us tea drinkers, but the actual taste lacks that verve we were so promised. Like that handsome Italian boy that seduced you during your Roman holiday adventure, he didn’t quite live up those romantic words he whispered in your ear, but you fell for it anyway.

Instant espresso is just the fix for that.

This smoothie was just as easy to make as your morning coffee. I made this quickly (I’m still in my robe and slippers here, just entertaining the idea of going to the gym before other weekend plans) and wanted to share it with you. Just get some of these simple ingredients— the instant espresso powder will be the easiest part— and you’ve got a luscious smoothie that’s better for you than a sugary latte. Completely vegan, non-dairy (use coconut or almond milk) and not a touch of sugar or honey.

On a quest to feel amazing, this little coffee fix gives more oomph and can be adjusted to your tastebuds while it adjusts a blah mood.

Espresso Smoothie

  • 4 cups almond or coconut milk

  • 2 heaping tablespoons instant espresso powder

  • 8-10 pitted dates

  • 1 tablespoon coffee extract

  • 1 heaping scoop of protein powder (hemp or plant-based)

  • a lot of ice

  • a smidge of maple syrup (optional)

Blend and enjoy!
